Goya (Nigauri) and Pork Stir-fry


Goya, or bitter gourd, is a traditional summer vegetable of Okinawa.
It is said eating Goya helps to beat the summer heat.
This time, I try to cook it by using a "Magic Fry Pan".

【Ingredients & Instructions】

It's "goya".




Cut the goya in half lengthwise.
Scoop out the insides with spoon.




Cut it into 8-mm lengths.
Soak it in water for 20 min.





After 20 min, drain the water.






goya    pork
A ( miso    sake    sugar    soy sauce )
sesame oil    salt



MIx A.







Cut pork into bite-sized pieces.
Add sesame oil to a well-heated the "Magic Fry Pan".
1 to 2 minutes on a medium fire.





Add the goya to the edge of the pan.
Push with wooden spoon.
Sometimes upside down.






Add "A" and stir to mix.








After 1 min.








Dish up on the plate.
Enjoy!








It has a slightly bitter taste, but this is the point to deliciousness.
